Hello hidegadrian , The Teams and Channels preferences can be edited from MS Teams (by the owners). Please refer to the below screenshots for reference.
Regarding editing from SAP while creation, you could reach to SAP Product Support.

The Teams channel is created as Public by default. However, this can be managed from MS Teams by it's owner.

As of now MS Teams is the only collaboration application that is offered as a standard integration with Sales and Service Cloud V2.
