So, having a brand new server environment in 2017, which choices do I have to make concerning Windows Server and SQL Server. The latest version of Sap Business One 9.2, PL07 have made this a lot easier.

Windows Server 2016 is now officially supported and there is a new package (9.2 PL07) to do a clean install directly on SQL Server 2016. In my case, installation and upgrade went without any problems at all, just follow the guide.

There was, only on the clients, a small setback.
In the "SAP Business One Administrator's Guide", chapter Prerequisites, there is a bullet for "SQL Server drivers". For me this was not clear. Normally this would be "Microsoft SQL Server Native Client" (sqlncli.msi). But once installed everything, on the company selection screen, the SQL 2016 option was missing. Obviously this was not the case on the server edition, so it had to be a missing "SQL Driver". After some searching and trying on a workstation the solution to this was "Microsoft ODBC Driver for SQL Server" (msodbcsql.msi), latest version for 2016.
