I already worked on batch management and serial management for 8 years, but want to understand GBT.

Well... Try to get your hands on a demo GBT 2.0 system. The documentation is quite solid, so you can get it up and running fast.
What's New in SAP Global Batch Traceability 2.0 - SAP Library
I've done a lot of testing myself, and that's ofcourse the best way.

I tried on google search for the GBT 2.0 demo or ides system with not much success. is it possible or tip, how to get hands on this please?

If you aren't a SAP Partner it can be difficult. Try your luck at the official SAP training institute.
